Recipe: Calamari Sauce

Yield: 3 Cups
4 Garlic cloves, chopped
4 tb Olive oil
Salt & pepper
1 lg Can plum tomatoes, crushed
2 tb Mint leaves, chopped
1 sm Bottle clam juice
2 lb Whole squid w/ tentacles
-- cleaned and cut up
Saute garlic in olive oil with salt and pepper just until garlic turns pale in color. Add tomatoes, simmer 20 minutes. Add mint leaves, clam juice, and squid. Simmer gently 15 minutes until squid is tender.
