Recipe: Easy Fritatta

Yield: 1 Servings
1 ts Oil
12 oz Potatoes; (red are nice)
6 Eggs
1/4 c Salsa
1/4 c Grated cheese
S & P
Preheat oven to 425'. Wash potatoes & cut small cubes.Leave skin on. Saute in pan a few minutes then cover for 10 minutes. Combine the rest of the ingredients & pour over potatoes in pan. Cover and cook for 3 minutes. Remove cover & cook in oven for 4-6 minutes until set.
