Recipe: Edith's Sweet Potato Souffle

Yield: 1 Servings
3 c Mashed cooked sweet potatoes
3 Eggs
1 c Sugar; (or 1/2 cup)
1 tb Vanilla
1 Stick melted butter
--------------------TOPPING-------------------------
1/2 Stick margarine
1/2 c Self rising flour
1/2 c Brown sugar
1/2 c Nuts; (pecan-walnuts)
(8x8 pan)
Mix first part together and pour into pans (sprayed w/Pam).
Top with topping (Mix together with hands until crumbly).
Bake at 350 degree until top is brown and crisp
Ingredients are doubled for a 9x13 pan
