Recipe: Herb Pesto

Yield: 12 Servings
2 c Fresh Herbs; * See Note
1 tb Fresh Thyme; * See Note
1/4 c Olive Oil
1/4 c Pine Nuts; Or Walnuts;
-- Toasted
Salt And Pepper; To Taste
3 Cloves Garlic; Minced
1/4 c Grated Parmesan Cheese;
-- Optional
Water; As Needed
Basil, parsley, cilantro, mint, spinach or and combination of 2 or 3. Marjoram, oregano or tarragon; optional.
Process until smooth adding water 1 tablespoon at a time. If a chunkier pesto is desired, omit water.
Makes 3/4 cup.
