Recipe: Jack's Pork Chops

Yield: 4 servings
4 Baking Potatoes; peeled and
-- cut into 1/2-inch thick
-- slices
1 lg Onion; skinned and sliced
Lemon & Pepper Seasoning
4 Pork Chops; up to 6
2 tb Butter
Pre-heat oven to 375-F degrees.
Place potato and onion slices in the bottom of a 10-inch by 16-inch pan that is at least 3 inches deep. Season with Lemon Pepper and place pork chops on top of the seasoned potatoes and onions. Season again.
Fill the pan with about 1/2-inch of water and place 1 tablespoon of butter at opposite ends of the pan. Cover the pan with foil and bake for 2 hours.
Remove from the oven, let cool for a few minutes, and serve.
