Recipe: Jalapeno Onion Marmalade

Yield: 1 servings

1 1/4 lb Red onions

      2 tb Olive oil
      2    Jalepeno chillies; seeded
           -- and thinly
           -- shredded
      2 tb Honey
      3 tb Red wine vinegar; up to 4
      3    Floz water
      1    Clove garlic; crushed
           Seasoning

Sweat off the diced onions in the olive oil. Cook until soft and add the crushed garlic. Add the jalepenos and incorporate with the onions. Add the honey and cook.

Add the vinegar and water and simmer until almost reduced. Adjust the seasoning.
