Recipe: Lime Chicken Shish Kabob

Yield: 4 Servings

      2    Chicken breasts, cut in
           Cubes
      2    Limes, juice of
      2 cl Garlic, minced
      1 tb Low sodium soy sauce
      1 tb Apple juice concentrate
      8 oz Medium mushrooms
      1    Red bell pepper, cut in 1"
           Cubes
     16    White pearl onions
      1    Green bell pepper, cut in 1"
           Pieces
      2 sm Zucchini, cubed

Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours, turning occasionally. Alternate chicken and vegetables on skewers. Grill or broil about 10 minutes, turning and basting with marinade.
