Recipe: Mixed Vegetable Stir Fry in Plum Sauce
Yield: 6 servings
2 tb Oil
500 g Brussels sprouts; trimmed &
-- halved 1 Red capsicum; seeded and -- thinly Sliced 1 Clove garlic; crushed
100 g Snow peas; trimmed
100 g Button mushrooms; halved
1/4 c Shallots; sliced
1 tb Fresh coriander; chopped 1 tb Plum sauce
1 . Heat oil in a wok or large frying pan. Saute brussels sprouts, capsicum and garlic for 2 minutes.
2. Toss through snow peas, mushmoms, shallots, coriander and sauce. Cook, stirring for 2 to 3 minutes. Serve immediately
