Recipe: Mrs Riedl's Salad
Yield: 1 Servings
1 pk (6 oz) lime jello 2 c Boiling water 2 c Miniature marshmallows 2 pk (8 oz) cream cheese; -- softened 1 cn (No. 2 1/2) crushed -- pineapple 1 Lemon ; Juice of 2 c Heavy cream
1/2 c Sugar
This is one of my absolute favorite recipes (given to me by a teacher in high school, Mrs. Riedl). We usually have this at holiday time or anytime we have a special occasion, because everyone loves it! I hope you will enjoy it too!
Dissolve jello. Add marshmallows to jello mixture and stir until melted. Cream the cheese and pineapple together. Add lemon juice to cream cheese mixture. Add jello mixture to cream cheese mixture. Whip cream. Add sugar. Fold whipped cream mixture into the other mixture. Pour into pan and refrigerate.
