Yield: 12 Servings
1 1/4 c Applesauce; natural -- no
Sugar 1 Egg -- beat to blend 2 tb Oil -- vegetable 1/4 c Honey 2 tb Orange zest 1 c Flour -- whole wheat 1 c Flour -- all purpose 2 ts Baking powder 1 ts Baking soda
1/2 ts Cinnamon
1/4 ts Allspice
1/2 c Raisins; soak in boil water
1/2 c Walnuts -- chopped coarsley
Spray muffin tins with nonstick coating or use paper liners. Preheat oven to 375-degrees. Blend applesauce, egg, oil, honey, and orange zest and set aside. In another bowl, blend flours, baking powder, soda, and spices. Add dry ingredients to wet mixture. Stir in raisins and walnuts. Mix to combine ingredients completely. Bake for 20 minutes. The calorie count per muffin is 165, and each has 4.5g fat. Without the walnut the calorie count is 148 per muffin, but the fat is only 1.6 grams.
