Recipe: Quick Tiramisu

Yield: 2 servings

     12    Sponge fingers
      4 tb Coffee rum liqueur; (4 to 5)
    285 ml Double cream; lightly
           -- whipped
      2 tb Cocoa powder; (2 to 3)
           Mint sprig

1 Lay the sponge fingers along a plate. Drizzle the liqueur over. Pipe a layer of whipped cream over the top using a star nozzle.

2 Dust with the cocoa powder. Repeat these steps. Serve dressed with a mint leaf.
