Recipe: Quick Succotash
Yield: 5 Servings
1/2 c Water
10 oz Frozen baby lima beans, (1 -- package) thawed 10 oz Frozen whole kernel corn, (1 -- package) thawed
3/4 c Diced green bell pepper
1/2 ts Salt
1/4 ts Dried whole summer savory,
-- crushed 2 c Seeded and diced peeled -- tomato
Bring water to a boil in a saucepan. Add beans; cook, uncovered, 5 minutes. Add corn and next 3 ingredients; cook 5 minutes, stirring occasionally. Remove from heat, and stir in tomato. Yield: 5 servings (serving size: 1cup).
Per serving: 142 Calories; 1g Fat (5% calories from fat); 7g Protein; 30g Carbohydrate; 0mg Cholesterol; 251mg Sodium
