Recipe: Sesame Zucchini 'n' Eggs
Yield: 1 Servings
2 Eggs 1 tb Water
1/4 ts Each basil leaves and salt
1/2 ts Each thyme leaves and pepper 2 ts Margarine
1/4 c Diced onion
1 c Sliced zucchini; ( -- 1/4-inch-thick slices) 2 ts Sesame seed; lightly toasted
In small bowl combine eggs, water, and sea-sonings; set aside. In 9-inch skillet heat mar-garine over medium heat until bubbly and hot; add onion and sauté' until translucent, about 2 minutes. Add zucchini and continue to sauté', stirring frequently, until zucchini is fork-tender. Add egg mixture and sesame seed and cook, stirring frequently, until eggs are set, about 2 minutes.
