Recipe: Taboulleh

Yield: 2 Servings
50 g 2 oz bergo or cracked wheat
lg Chunk of cucumber
1 Third of a green pepper
De-seeded and finely diced.
sm Red onion diced.
30 ml 2 tbsp Fresh chopped mint.
Juice of half a lemon.
Black pepper.
Cook the wheat in twice its volume of boiling water for 10 minutes or leave it to stand in the same amount of just boiled water for 15 minutes until the grains have swelled and softened. Drain and squeeze out the moisture and place the wheat in a bowl. Stir in the remaining ingredients.
