Recipe: Tabuli Salad

Yield: 8 Servings
1 1/2 Bunches parsley chopped fine
1 lb Cracked wheat; medium or
-- fine
1 c Fresh mint leaves
1 1/2 Bunches green onions
3 lg Tomatoes; chopped
3 lg Lemons; juice of
2 tb Salad oil
1/4 c Olive oil
1 tb Sugar
Salt to taste
Clean, wash & chop vegetables. Wash & soak wheat for 10 minutes. Squeeze water from wheat. Add all vegetables, oils, lemon juice, sugar & salt. Mix well. This recipe is better if prepared a day in advance so flavors can melt together.
