Recipe: United Nations Potato Salad

3 c Grilled Copper River Sockey; -- (3 to 4) -- Salmon well chilled with -- bone and skin -- removed 2 c Red potatoes; cut into -- bitesized -- pieces, skin on, -- cooked 2 lg Mangos; peeled and seed -- removed, cut into -- bitesized pieces 1 c Daikon; cut into thin -- jullien strips 1 c Jicama; cut into thin -- jullien strips 1/2 md Red onion; cut into thin -- rings 1 bn Green onion; chopped
1/3 c Parsley; chopped
1/3 c Cilantro; chopped
1 4 ounces jar pimiento; -- diced, well drained
All ingredients should be well chilled
Combine all of above ingredients and gently toss with Mango Ginger Dressing and enjoy!
