Ingredients:
1/3 Cup(s) Dried peaches, chopped
2 Tablespoon(s) Amaretto, plus 2 teaspoons
1/3 Cup(s) White rice, uncooked
2 2/3 Cup(s) Evaporated skim milk
1 1/4 Teaspoon(s) Unsalted butter
2 Tablespoon(s) Sugar, plus 2 teaspoons
2 Eggs, beaten
Cinnamon
Nutmeg
Directions:
Soak the peaches in the Amaretto for 10 minutes. Set aside. Combine
the rice, milk, butter, and sugar in a saucepan. Bring to a boil,
lower the heat, and cook until the rice has absorbed the milk but the
mixture is creamy, about 15-20 minutes. Stir constantly so the milk
does not curdle. Add the peaches and cook 1 more minute. Remove from
the heat and add eggs. Return to the heat and cook for about 5 minutes
until the mixture is creamy. To serve, sprinkle individual dishes of
rice pudding with cinnamon and nutmeg. Per serving: calories 335, fat
4.3g, 12% calories from fat, cholesterol 115mg, protein 17.5g,
carbohydrates 51.4g, fiber 1.1g, sodium 229mg. Exchanges: 3 1/2
