Ingredients:
1 1/2 Cup(s) All purpose flour
1 Cup(s) Whole wheat flour
1/2 Cup(s) Brown sugar, packed
4 Teaspoon(s) Baking Powder
1 Teaspoon(s) Salt
1 1/2 Teaspoon(s) Ground cinnamon, I like
cinnamon so I used 2
teaspoons up to 2
1 Tablespoon(s) Poppy seeds
2 Eggs, or egg substitute
equivilant
1 1/2 Cup(s) Applesauce
1 Teaspoon(s) Vanilla extract
1/4 Cup(s) Oil
Directions:
Combine applesauce, eggs, oil, and vanilla in small bowl; mix well. In
a seperate bowl mix flours, brown sugar, baking powder, salt, cinnamon
and poppy seeds. Add wet ingredients to dry ones; stirring until just
moistened. Spoon batter into greased muffin tins, filling 2/3 full.
