Ingredients:
2 Eggs
1 1/2 Cup(s) Sugar
1 Cup(s) Oil
2 Cup(s) Flour
2 Teaspoon(s) Vanilla
1 Teaspoon(s) Salt
1 Teaspoon(s) Baking soda, bicarbonate
1/2 Cup(s) Raisins, up to 1
1 Cup(s) Chopped nuts, optional
4 Apples, peeled and diced.
Directions:
Recipe by: Merle Gutkin (my sister in London) (Preheat oven to 325
deg. F.) Beat eggs, sugar & oil. Add baking soda, flour, salt. Stir in
pre-soaked raisins and apples. (soak raisins in boiling water or
liquer of your choice for about 1/2 hour, then drain.) Pour into
greased, shallow pan, bake at 325 deg. F. 45 minutes - 1 hour. Posted
