Ingredients:
1 Cup(s) Skim milk
1 Cup(s) Raisins
1 Cup(s) Applesauce
1/3 Cup(s) Packed brown sugar
1/4 Cup(s) Canola oil
1/2 Teaspoon(s) Cinnamon and allspice
Salt, optional
1/8 Teaspoon(s) Nutmeg
2 Cup(s) Cake flour
1 Teaspoon(s) Baking soda
1 Teaspoon(s) Baking Powder
1 Cup(s) Chopped apples or dates
1/2 Cup(s) Chopped walnuts, optional
Directions:
Preheat oven to 325 degrees. In a large bowl, blend the milk, raisins,
applesauce, sugar, oil and spices thoroughly. In another bowl, mix the
flour, baking powder and baking soda. Combine with the wet
ingredients. Fold in the apples or dates. Use Baker's Joy in a
9x4-inch non-stick pan. Pour in the batter and bake for 1 1/4 hours.
Cool on a rack, slice and serve. Serves 8-10 Per Serving: Cholesterol
