1/2 Cup(s) Celery, chopped
2 Garlic, finely chopped
1 Pound(s) Chicken thighs, skinless
16 Ounce(s) Tomatoes, diced undrained
1 Cup(s) Rice, long-grain uncooked
2 Teaspoon(s) Bouillon, chicken instant

Directions:
Spray nonstick Dutch oven with vegetable cooking spray and place over
medium heat. Add onion, celery and garlic; cook 3 to 5 minutes, or
until tender, stirring often. Add remaining ingredients except peas;
bring to a boil. Reduce heat to low; cover and simmer 30 minutes. Add
peas, cover and simmer 10 minutes longer. To serve, remove bay leaf.
