Ingredients:
1/2 Cantaloupe
1 Avocado
Boston lettuce leaves
Grated lime rind for
Garnish
Lime Dressing
2 Tablespoon(s) Lime juice
1/4 Teaspoon(s) Salt
1/8 Teaspoon(s) Dry mustard
1 Pinch(s) Cayenne pepper
1 Tablespoon(s) Almond Oil
3 Tablespoon(s) Salad oil
Directions:
Scoop out and discard cantaloupe seeds. Peel and slice into thin
crescents. Halve, seed, and peel avocado. Thinly slice lengthwise.
Alternate cantaloupe and avocado slices on lettuce leaves on serving
plate or 4 individual salad plates. Drizzle with Lime Dressing.
Sprinkle with lime rind and serve at once. Lime Dressing: In a small
bowl mix lime juice, salt, mustard, and cayenne. Using a whisk or
