2 Onions, Cut In Half And
thinly sliced
2 Leeks, Washed And Thinly

Sliced white part
2 Scallions, chopped
2 Cloves Garlic, crushed 2 to
2 Teaspoon(s) Minced Fresh Ginger
9 Cup(s) Water
1/4 Cup(s) Soy sauce
Freshly ground black pepper
to taste
1 Pinch(s) Ground cayenne
Place the onions, leeks, scallions,garlic, and ginger in a large soup
pot with 1 cup of the water. Cook, stirring over medium heat for 5
minutes. Add the remaining ingredients, reduce the heat to low, cover,
and cook for another 55 minutes to allow flavors to blend. Variation:
For a heartier soup, add 2 potatoes, peeled and cut into chunks, when
