It's very definitely caused by Virtual memory - after the MacOS 9 install, I
hadn't checked it, and it had enabled 1Mb of Virtual Memory on top of the
224 Mb of real RAM I had installed. Switching it off cured the problem, so
that I can now generate 3-channel MacinTalk and carry out asynchronous Sound
Recording and playback with no ill effects.

If it's of any use to anyone, the FB2 Gestalt call is :

VirtualMemory& = FN GESTALT(_"vm ") 'Check Version
LONG IF SYSERROR
  PRINT "System Error"
XELSE
  LONG IF VirtualMemory& = 0
PRINT "VM is not on "
  XELSE
PRINT "VM is on, Version number is ";VirtualMemory&
  END IF
END IF

Thanks to everyone again.

Now, all I have to do is work out what the AIFF file header is ...

Phil.
