I see no reason why the eventual documentation can't be converted to multiple formats. I convert documents from PBwiki to HTML help for the courses I teach. I use PBwiki as a university instructor. It's okay, but I have issues with it from time to time. Also, it doesn't have quite the reach of the Wiki Foundation pages.
