Ingredients:
10 Cup(s) Unfiltered apple cider
Peel of 1 orange
2 Cinnamon sticks
1 Pinch(s) Grated nutmeg -, lg pinch
6 Whole cloves
1/2 Cup(s) Calvados or apple brandy
2 1/2 Cup(s) Sugar syrup
2 cups water and 1/2 cup
sugar heated
Until sugar dissolves), Until sugar dissolves
4 Cup(s) Sparkling cider
4 Teaspoon(s) Apple cider vinegar
2 Tablespoon(s) Freshly-squeezed lemon juice
Directions:
In a large heavy-bottomed saucepan, combine all the ingredients. Heat
until the mixture begins to simmer. Decrease to medium-low heat and
let the mixture steep and reduce (but do not let boil) to 8 cups,
about 1 hour. Refrigerate until cold. Pour reduced liquid into a
shallow pan. Freeze, stirring every 1/2 hour, until hard, about 3 to 4
