Ingredients:
2 Tablespoon(s) Unsalted butter
2 Cup(s) Finely chopped onions
3 Pippen or granny smith
apples about 1lb.
Juice of 1/2 lemon
Zest of 1 lime
2 1/2 Cup(s) Chicken broth, preferably
homemade
1/2 Cup(s) Canned unsweetened coconut
milk well stirred light
Coconut milk, or
Half-and-half
1 Tablespoon(s) Sugar, or to taste
Salt and freshly ground
White pepper
Directions:
How to Prepare: Melt the butter in a large soup pot and saute the
onions over medium-low heat, stirring occasionally until soft, about 5
minutes. Meanwhile, peel, core, and slice the apples into eighths.
Place in a bowl and toss with the lemon juice to prevent
discoloration. Add the apples to the onions, cover, and continue
cooking, stirring occasionally, until the fruit is slightly mushy,
about 5 minutes. Add the chicken broth, 1 cup water, the coconut milk,
and the sugar and bring to a boil. Reduce the heat to low and simmer,
partially covered, for 5 minutes. Stir in limezest. Season to taste
with salt and white pepper. Ladle the soup into warmed bowls. Garnish
