1 Teaspoon(s) Baking Powder
1/2 Teaspoon(s) Baking soda
1/2 Teaspoon(s) Salt
1/4 Teaspoon(s) Ground nutmeg
1/2 Cup(s) Low-fat buttermilk
1/2 Cup(s) Applesauce
1 Tablespoon(s) Butter or stick margarine
1 Egg
1 Egg white
Cooking spray
1/3 Cup(s) Chopped pecans
1/4 Cup(s) Packed brown sugar
1/2 Teaspoon(s) Ground cinnamon
Preheat oven to 350ø. Lightly spoon flour into dry measuring cups;
level with a knife. Combine flour and next 4 ingredients (flour
through nutmeg) in a large bowl; make a well in center of mixture.
Combine buttermilk, applesauce, 1 tablespoon butter, egg, and egg
white in a bowl; add to flour mixture, stirring just until moist.
Spoon batter into a 9-inch round cake pan coated with cooking spray.
Combine pecans and remaining ingredients in small bowl; stir with a
fork until mixture resembles coarse meal. Sprinkle evenly over top of
cake. Bake at 350ø for 35 minutes or until a wooden pick inserted it
center comes out clean. Yield: 8 servings. CALORIES 200 (30% from
