250 Gram(s) Self raising flour, 8oz
1/2 Teaspoon(s) Salt
1/4 Teaspoon(s) Cinnamon
50 Gram(s) Solid vegetable oil, 2oz
125 Gram(s) Ready to eat apricots
roughly chopped
50 Gram(s) Walnut pieces, 2oz
25 Gram(s) Soft dark brown sugar, 1oz
150 Soya milk, 1/4 pint
2 Tablespoon(s) Soya milk for glazing
Preheat the oven to 230 C, 450 F, Gas Mark 8. Sift the flour, salt and
spice into a bowl. Rub in the fat until the mixture resembles fine
bread crumbs. Stir in the apricots, walnut pieces and sugar, add the
milk and mix to a soft dough. Knead gently until smooth. Roll out the
dough on a lightly floured surface to a 1 cm ( 1/2 inch) thickness and
cut out 8-10 rounds with a 6cm (2 1/2 inch) biscuit cutter. Transfer
to a greased baking tray, brush tops with milk and bake on the middle
oven shelf of the preheated oven for 8-10 minutes until well risen and
