2 Ripe avocados -, abt 3/4 lb
1 Spam luncheon meat -, 7 oz
cut in chunks
Juice of 1 lemon
1/2 Cup(s) Dairy sour cream
1/4 Teaspoon(s) Salt
Few drops hot pepper sauce
1 Envelope unflavored gelatin
1/4 Cup(s) Cold water
Lettuce leaves
Pitted black olives
1 Other Carbohydrates
Halve, pit, and peel avocados; cut into chunks. Combine avocado, Spam,
lemon juice, sour cream, salt, and pepper sauce in food processor or
blender and process until smooth. Soften gelatin in cold water;
dissolve over boiling water. Stir in avocado mixture. Divide into
eight 1/2-cup molds. Refrigerate at least 2 hours. To serve unmold
onto lettuce-lined salad plates; garnish with black olives, if
desired. This recipe yields 8 servings. Nice to know: You can make
this salad in individual molds or in one 4-cup mold. Source:
